ReplyDelete不好意思,我是面包初学者。我想请问刚出炉的面包是不是表面都是比较硬,冷却过程中才慢慢变软?我做了几次面包,表面都不太软,尤其是底部更硬,用手指甲去敲它还会响的呢!我起初认为是火候太高,我今天就用150度来烤,颜色刚刚好,可是还是会硬哦!对了,颜色深浅会有影响吗?还是我的面团并没有拉出完美薄膜的关系(我的面团可以拉成薄膜,可是一下子周围就破几个洞了,不能撑久就是了)?很懊恼哦!
请问你用什么牌子的搅拌机?用什么速度来搅面团?用多久的时间,面团才能拉出完美的薄膜?
还有哦,我做的热狗面包,烘好后热狗和面包之间有空隙,不像你的那么紧密的?
